Mango Mousse Cake

Mango is undoubtedly the king of fruits for Asians and particularly in Pakistan. We do celebrate summer with mango in many varieties. be it shakes, desserts, lassi, or any other similar fashion.

This is the reason I experimented and made this delicious mousse with cake.

Vanilla One Bowl Cake

the cake used in this recipe is my favourite and easy to make (one bowl cake), without butter and with only 2 tbsp of oil makes this cake light and moist (does not need to moist with sugar syrup). This cake can be made at any time to have it as a tea cake and does not require any additional topping as well.

Mousse

Refreshing and whipped with cream to create a magical filling, remove the gelatin and serve it like ice cream.

Tips & Tricks

  • During the process, mixed with whipped cream the filling will last good for 5 days in the refrigerator, Let alone the mango puree can be saved up to 6 months in an airtight jar with freezing temperature.
  • Gelatin Sheets can also be used instead of gelatin powder
  • [tie_list type=”lightbulb”]1 tbsp Gelatin mixed with 3 tbsp water, leave it for 5 minutes so it soaks all the water. Add the mixture into the microwave for 15-20 seconds and use it immediately.

Dessert Topping

We have used fresh mango for the topping, but you can furnish it with any topping of your liking with your favorite fruit to create a fusion of your own.

Further, we have used mango jelly to attract kids, but you can also use the mango puree to make the mango festival crazier.

Ingredients

FOR CAKE

  • 3/4 cup All-Purpose Flour
  • 2 tbsp Corn Flour
  • 1/2 cup Sugar
  • 1/2 tsp Baking Powder
  • 1/4 tsp Salt
  • 2 tbsp  Oil
  • 1 tsp Vanilla extract
  • 3 Eggs

FOR MOUSSE

  • 1 cup Whipping Cream
  • 1 cup Mango Puree
  • 2 tbsp Icing Sugar
  • 2 tsp Gelatine
  • 1 cup Very Warm Water

TOPPING

  • 1 packet Jelly Powder
  • 1 cup Very Warm Water
  • Mango As needed

Instructions

FOR CAKE

  • In a bowl add flour, sugar, cornflour, baking powder, salt, and mix well.
  • Then add oil, vanilla, eggs, and beat until well combined. (don’t overbeat)
  • Pour in the prepared pan and bake at 180 degrees for 15 to 20 minutes.

FOR MOUSSE

  • Remove the skin of the mango and cut it into slices.
  • Blend them in the blender and make a fine puree.
  • Whip the cream until the soft peak and mix with the mango puree
  • Mix the jelly in hot water, pour carefully on the cold mousse.
  • let it rest in the fridge until set completely.
