FOR CAKE
- 3/4 cup All-Purpose Flour
- 2 tbsp Corn Flour
- 1/2 cup Sugar
- 1/2 tsp Baking Powder
- 1/4 tsp Salt
- 2 tbsp Oil
- 1 tsp Vanilla extract
- 3 Eggs
FOR MOUSSE
- 1 cup Whipping Cream
- 1 cup Mango Puree
- 2 tbsp Icing Sugar
- 2 tsp Gelatine
- 1 cup Very Warm Water
TOPPING
- 1 packet Jelly Powder
- 1 cup Very Warm Water
- Mango As needed
FOR CAKE
In a bowl add flour, sugar, cornflour, baking powder, salt, and mix well.
Then add oil, vanilla, eggs, and beat until well combined. (don’t overbeat)
Pour in the prepared pan and bake at 180 degrees for 15 to 20 minutes.
FOR MOUSSE
Remove the skin of the mango and cut it into slices.
Blend them in the blender and make a fine puree.
Whip the cream until the soft peak and mix with the mango puree
Mix the jelly in hot water, pour carefully on the cold mousse.
let it rest in the fridge until set completely.
