How to bake a cake in Microwave?

Microwave is now part of many households, whereas conventional oven is still not a choice for some rural and even urban areas. This recipe became very handy during 2020 when a lot of people are limited by choices to enjoy everyday items.

Types of Oven

Convection / Non Convection

Simply an oven that has convection to transfer the heat and evenly distribute it around the food. It happens when the heat is passing through a heating element and a fan circulates the air inside the oven.

As Non-Convection the fan and convection are not part of it.

In these ovens, the Preheating of the oven is a necessary step for almost all baking recipes.

Microwave

Microwave oven on other hand uses electromagnetic energy, electromagnetic waves that heat up the food in the appliance and do not have any mechanism for Pre Heating.

To Bake in Microwave ovens, make sure that no aluminum is used at all. Instead, use microwave-safe dishware.

  • Check the bottom of the dish to make sure it carries a “microwave-safe” symbol (a microwave with some wavy lines)

Fruit Cake

Unlike other recipes, this recipe became one of my favorites. as it has a nearly baked fruit cake taste.

Unlike other parts of the world, Fruit cake in Pakistan and the Indian region is not eaten on special occasions like Christmas. An evening tea snack is a savior when you are delighted with sudden guest arrival, in fact, the use case is numerous.

Why This Recipe?

After trying various microwave related recipes, the core problems which I faced were

  • Uncooked from inside
  • The raw smell of eggs
  • or Dense if overcooked

Out of the above three, the easiest target was to cover the unpleasant smell of eggs, so here comes the secret ingredient that was a real game-changer.

Magic of Orange Zest

Orange zest was a real game-changer, not only does it covers the smell instead it adds a great and rich taste which leaves a pleasant after-effect.

Buttermilk & Butter

Adding fuel to fire, the buttermilk and butter took away the problem of being uncooked from inside, and instead of getting dense, it came out soft and moist.

Ingredients

  • 1 Cup Warm Milk
  • 1/2 Tbsp Vinegar
  • 1 Egg
  • 120 g Butter
  • 250 g All-Purpose Flour
  • 3/4 cup Sugar
  • 1 /2 Tsp Baking Powder
  • 1/4 Tsp Baking Soda
  • 1 Tbsp Orange zest
  • 1/4 Cup Tutti Frutti
  • FOR THE ORANGE GLAZE
  • 1/2 Cup Icing Sugar
  • As Needed Orange Juice

Directions

FOR BUTTERMILK

  1. In one cup of warm milk add vinegar let it rest for 5 minutes.

FOR THE CAKE

  1. Then add egg and butter in the buttermilk and mix well, whisk until well combined, and set aside.
  2. In a large bowl, mix together flour, sugar, baking powder, baking soda, orange zest, and tutti frutti.
  3. Stir in buttermilk mixture into the dry ingredients, followed by the butter until no lumps remain. The batter will be thick.
  4. Pour the mixture into a microwave-safe dish and bake for 6 to 8 minutes (depending on your microwave)

FOR THE GLAZE

Pour some orange juice in the icing sugar and mix well until no lumps remain.

  1. serve the cake cooled cake with glaze or whip cream.
