MONTE CRISTO SANDWICHES

  1. On a plate, whisk together the eggs, milk, and seasoned salt, paper, and set aside.
  2. To make each sandwich, lay three pieces of bread on your work surface. Spread a thin layer of the mayo mixture (about 1 tsp) on one piece and top that with one slice of cheese followed by one slice of turkey. To the second slice of bread, spread a little more mayo and top with one slice of turkey followed by one slice of cheese (it’s important that the cheese is on top of the 1 )
  3. Preheat a skillet over medium heat, add the butter or oil, and allow the butter to melt and the mixture to get nice and hot.
  4. Dip each sandwich (carefully) in the beaten egg mixture making sure both sides are well coated in the egg.
  5. Place the sandwiches in the hot skillet and cook for 3 to 4 minutes on each side or until the outside is a lovely golden brown color and the cheese is fully melted.

CROQUE MONSIEUR

  2. In a small saucepan, melt together the butter, add the flour and cook them together stirring constantly for about a minute. Add the milk, season with salt, pepper, mustard paste, and cook the sauce on medium heat until it thickens, it should take about 5 minutes.
  3. To assemble the sandwich, smear some of the mustard on both slices of the bread, spread some sauce on one slice lay some cheese followed by a slice of mortadella. Top with the other slice of bread, smear some of the sauce on top of the bread and top it with some cheese.
  4. Pop the sandwiches in the oven but make sure your oven rack is not right under the broiler otherwise the cheese will burn.
  5. Allow the cheese to brown and bubble and enjoy it!
