As a beginner, my first target was to master cupcakes, get things at room temperature and follow the steps carefully. I will be honest that at one point good cupcake weighs more than baking a cake.

The more I get into practice and my experiments phase widens; I started trying different ingredients and different techniques to master my skills. And Viola! with this recipe, I reached a point where I can prepare the batter quickly, save it, and can make the cupcakes any other day.

Unlike other recipes; this recipe does not need butter and is made with oil. Further, it saves the hassle of beating and does not need an electric beater but simple mixing is enough.
The sugar crunch factor on top of the cake makes the cracking structure and appealing to me.

Easy Vanilla Cupcake Recipe Without Butter
Ingredients
- 3 Eggs
- 150 gram Sugar
- 1 tsp Vanilla extract
- 150 ml oil
- 80 ml Milk
- 200 gram All-Purpose Flour
- 2 tsp Baking Powder
- 1/2 tsp Salt
- Sugar To Sprinkle
Instructions
- In a bowl beat eggs along with sugar and vanilla for 2 minutes.
- Then add oil, milk, and beat for more than 2 minutes.
- Then shift all-purpose flour, baking powder and, salt mix well.
- Cover the bowl and let it rest in the fridge for 1 hour.
- Take a cupcake tray and place linings, fill the batter and tap the tray for 2-3 times on the working counter sprinkle some sugar on top (makes 12-14 cupcakes)

I was out of gutter but really wanted to make cupcakes so I used this recipe last night. I was kind of worried they wouldn’t turn out and I thought the amount of oil was suspicious so only put like half of it. I baked them at 350 for about 30 minutes and they turn out so good.
The best recipe for cupcakes. Really very tasty and soo easy. I was worried a bit, cause my previous tries with another recipes did not turn up very well- were a bit raw in the middle. But these are perfect- completely baked and so fluffy..
