- 85 g Butter unsalted butter room temperature
- 150 g caster sugar or granulated sugar
- 1 Egg Larg
- 1 tsp vanilla extract
- 150 g all purpose flour
- 1/2 tsp Baking soda
- 1/2 tsp Salt
- 1 cup chopped white chocolate (or white chocolate chips)
For Cookies
Preheat oven to 180 C (350 F): line two baking trays with baking or parchment paper. In a bowl add the butter and sugars and beat using an electric beater on medium speed for a minute or two until smooth and creamy. Add vanilla and egg and beat until combined, scraping down the sides of the bowl.
Add flour, baking soda, salt and beat again quickly until a soft cookie dough forms. Add chocolate chips and stir.
Scoop cookie dough into small balls and place on baking trays. Place in oven for 10-11 minutes or until golden brown on the edges.
Leave cookies to cool for 5 minutes before transferring to a wire rack to cool completely.
