Homemade Crust
I experience that pre-made crust is somehow not my type as I would love to experience more flaky and totally in control crust than full of preservatives or even worse hydrogenated lard. Above all, due to homemade crust, we get more flavor and aroma due to butter which also helps in the great hold.
Cold Ingredients
Further, the ingredients are used cold which helps in the formation and avoids butter melting while kneading. When butter got heat and melts during the cooking in the oven, that is a real treat which gets the attention of all households….mmmm something good is cooking.
As Summer gets in motion (which might go to stay a little longer )Blueberries are freshly available and it’s a great time to bake a batch of these mini pies as summer might stay for a while but might berries disappear.
Homemade pies made from scratch from crust are far better than store-bought. These freshness-bursting pies will crave you more due to their buttery deliciousness and super flaky crunchy sounds.
Can we use Shortening instead of Butter?
Yes, you can or even you can use half a qty of each (butter and shortening) but I do recommend using butter due to its melting resistance.
Do I need a food processor to knead dough?
Not at all, you can pastry cutter but a food processor makes it easy quick to get awesome results.
Can I make a full pie with the same recipe?
Absolutely, you can make the regular pie with the same recipe for crust and filling but the crust needs a pre-bake treatment before adding the filling.
How to handle hard dough?
Let it rest for 10-15 minutes at room temperature before rolling and make sure to dust the rolling surface.
Can we make and store the dough?
Yes, It can be stored for 2 days in the refrigerator and up to 3 months in the freezer.
Important Tips
- Make sure to use all-purpose flour without gluten to get perfect results
- butter should be cold and hard
- Use Icy cold water
- Do not knead the dough

Mini Blueberry Pies
Ingredients
For Pie Crust
For BlueBerry Filling
- 2 cup Blueberries
- 1/8 cup Water
- 2 tbsp Sugar
- 1/2 tbsp Lemon Juice
- 1 tbsp Cornflour
Instructions
For Pie Crust
- Mix flour, sugar and salt into the bowl of a food processor and pulse a few times to combine.
- Add the cold diced butter and pulse the mixture until coarse crumbs form. The mixture should remain dry and powdery.
- Add 6 – 7 Tbsp of cold water and pulse again just until moist clumps form. (Be careful not to add too much water to the dough)
- Gather dough together into a ball (it should not be smooth and DO NOT knead the dough)
- Cover with plastic wrap and refrigerate for 1 hour.
For Blueberry Filling
- In a pan add blueberries, sugar, lemon juice, water, and cook on low flame until sugar dissolved.
- Mix the cornflour in water and mix in the blueberries, cook again until thickened.
Assemble
- Preheat oven to 375° F 180 C.
- Roll the Dough use a 3 & 1/2 inch circle cutter to cut circles out of the pie dough. (Cut some star or heart or any shape you like and bake for 7 to 8 minutes or until golden brown)
- Take a muffin tin and place one circle in each opening.
- Add blueberries and bake mini pies until golden and juices are bubbling.
- Remove from the oven and immediately place a heart on top of each mini pies.
